2014 Cuvée de l'île

The pinnacle of Unsworth's sparkling wine collection, Cuvée de l'île is crafted in the traditional method like Champagne. With 60 cases produced, 2014 Cuvée de lîle is Unsworth's smallest production wine. Pinot Noir, Pinot Gris and Auxerrois are sourced from our estate vineyard and from parcels in Glenora and North Cowichan. Vinified in the traditional method, the grapes are hand harvested, whole cluster pressed, with only the finest free run juice being utilized. The majority of the wine is fermented in tank with the small remainder fermented and aged in neutral French barrels. After fermentation the wine is lees aged in tank and for a further 15 months in bottle before hand riddling and disgorgement. Following a minimal Extra Brut style dosage, the wine was aged for a further year before release. Presenting as a more complex and savory style compared to Charme de l'île as it takes several years from grape to shelf.

Production Notes
Cuvée de l’île is our sparkling wine made in the Champagne or Traditional method. This method of production is much more labour intensive, requiring time and patience. The Champagne method results in a serious, age-worthy wine with complex flavours.
Winemaker Notes
The 2014 was left on its lees in bottle for a year and a half before disgorgement and a very small dosage leaving the wine crisp and bracingly dry. The extended aging allows the flavours and mid-palate to integrate with the acidity. This leaves the wine complex and rich while being poised and elegant.
Food Pairing Notes
Cuvée de l'ïle is excellent with smoked salmon and cream cheese hors' d'oeuvres, and aged hard cheeses, quince paste on any of Lesley Stowe's Crackers.
