Tasting Notes
Sunnydale Vineyard Rosé has less opulent fruit when compared to our Unsworth Rosé. It is bone dry with firm but balanced acidity. The herb notes of sage and heather compliment the fruit notes of raspberry and white strawberry and lead to a long finish.
Vineyard Notes
This fruit is from Sunnydale Vineyard in Saanichton. It is 3.9 Acres of Southeast facing vineyard with soils comprised of silty marine loam.
Production Notes
Between choice of variety, time in contact with skins, and countless other options, rosé is a winemakers blank canvas. The Pinot Noir clone 164 clusters were destemmed and lightly crushed before soaking during the days work. After less than twelve hours of skin contact the juice was pressed to tank for fermentation and aging on fine lees until bottling in the spring.
Food Pairing Notes
Sunnydale Vineyard Rosé is flawless with spot prawns regardless of the preparation. Grilled on a skewer brushed with Chimichurri for peel-and-eat prawns with this rosé is a dream.
